Roasted Red Pepper, Spinach, and Mozzarella Stuffed Chicken

Instructions:

1. Preheat your oven to 375°F (190°C).

2. Butterfly the chicken breasts by slicing horizontally through the thickest part of each breast, but not all the way through. Open up the chicken breasts like a book.

3. Season the chicken breasts with salt and pepper on both sides.

4. In the center of each chicken breast, layer a few slices of roasted red peppers, a handful of fresh spinach leaves, and a generous amount of shredded mozzarella cheese.

5. Fold the chicken breasts back over the filling, pressing down gently to seal the edges. Use toothpicks if necessary to secure the chicken.

6. Heat a large oven-safe skillet over medium-high heat and add a drizzle of olive oil. Once heated, add the stuffed chicken breasts to the skillet and cook for about 3-4 minutes on each side, or until golden brown.

7. Transfer the skillet to the preheated oven and bake for about 15-20 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.

8. Remove the skillet from the oven and let the chicken rest for a few minutes before serving.

9. Serve the roasted red pepper, spinach, and mozzarella stuffed chicken with your choice of sides, such as roasted vegetables, mashed potatoes, or a fresh salad.
